Peach color, fine and constant bubble. Nose on notes of red and exotic fruits (currants, cherry, passion fruit), all lightly sprinkled with spices (cinnamon). The palate has a good length, with aromas of red fruits. This sparkling wine has a nice texture and elegant bubbles. The finish combines a nice freshness, with notes of fruit paste and spices.

Traditional method sparkling rosé grown in Provence on the southern-most hills in the back county of the Var.
Rocky and limy clay with southern exposure between 160-200 meters altitude.
Thanks to our altitude and the microclimate of our estate, we enjoy relatively fresh temperatures for Provence which allow us to obtain the natural acidity necessary for the manufacture of sparkling wine.
Grenache, Syrah.
Each parcel is vinified separately; grapes were quickly pressed with early separation of pressed must; tight cold static must settling; temperature control of fermentation at 16-17°C. After fermentation and stabilization, the base wine is bottled for second fermentation.
After minimum 9 months on the lies, the wine is released for sale over the course of the year as it is needed.

GUIDE DES VINS DE PROVENCE

Eye: clear salmon. Nose: bread pudding, caramel, passion fruit, savory, sugary red fruits, melon and liquorices. Palate: fine and numerous bubbles, with notes of red berries, strawberry and spices. Conclusion: slightly bitter but refined bubbles. Associate with appetizer.

Eye: Light old rose with orange reflects and nice brilliance. Nose: typical and refined, with wild notes of white pepper, a subtle freshness of guava and white melon. Nice minerality. Palate: fresh and ample, nicely balanced, abundant bubbles, yet supple and refined. The final is finely peppery and persistent. Conclusion: an elegant appetizer, with fine bubbles and aromas mixing the refinement of spices, earthy freshness and notes of exotic fruits.
